Stay warm this winter and beat the sneezes and chills with Grandpa’s Chicken Soup.
Perfect for the initial onset of any cold or ‘flu or just as a great way to warm up on a cold winters day.
GRANDPA’S CHICKEN SOUP
2 carrots – chopped
2 celery sticks – chopped
1 zucchini – chopped
1/2 cauliflower – chopped
2 cloves garlic – crushed
1 knob ginger – grated
3 spring onions – chopped
1 large onion
1/2 cup barley
4-6 organic/free range chicken legs
chicken stock (use 1 cup of stock per chicken leg)
+ equal amount water
salt and pepper to taste
juice of 1/2 lemon
Throw everything besides the parsley into a large pot, sauté, then bring to the boil.
Simmer for 40 mins or until everything is well cooked and the chicken falls off the bone.
Add parsley and lemon, season to taste.
Super easy and great way to combat colds and boost energy.
